This plant based coffee creamer recipe is a favorite at our house. No reason to give up your morning coffee just because you have adopted a plant based diet. This non-dairy creamer will hit the spot and the recipe just takes a few minutes to make.

  • Vitamix (or power blender)


  • 1/2 cup raw cashews
  • 3/4 cup water
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 dates (or agave syrup) (optional sweeter)


  • Place all ingredients in power blender.
  • Blend on high for 1 minute.
  • Pour into coffee and enjoy. Refrigerate any leftover creamer.

We like using raw cashews (instead of roasted and salted) so you don’t consumer more salt than you need. Try these Raw Cashews if you can’t find any at your local store.

A Vitamix (or other high-powered blender) will work best to properly grind the cashews. If you do not have a Vitamix though, you can boil the cashews in a cup of water for about 10 minutes to soften them. Then, the cashews will easily blend with the other ingredients.
